Remember this post? I’ve been pretty sporadic about making meals at home since then, except for the past few weeks when I’ve cooked more than once each week. I’ve been trying a few new recipes, so I thought I’d share the ones I liked.
– Good Old-Fashioned Pancakes (image via): This recipe is not new to me; I’ve been using it for months. I tried it one day after my friend Smita tweeted the link. If you follow me on Instagram, you may know that I eat pancakes almost every weekend. If I’m not making them at home, it’s probably because I’m out ordering them for brunch. These are pancakes from scratch and they’re still very easy and very tasty.
– Thai Beef with Basil: Asian-style recipes are my favorite to make at home and I tried this one for the first time yesterday. Again, this one was super easy and the fragrance/taste of the basil was yummy.
– Jambalaya: I love a one-pot recipe. For this one, you just slowly add in all the ingredients and then let the whole thing simmer for 30ish minutes. Easy peasy and delicious. I didn’t have any shrimp when I tried this, so I eliminated that, and I definitely put in a bit too much spicy creole seasoning for my taste. In the end I just powered through with several glasses of water because it still tasted pretty great.

I tried a new recipe for macaroni and cheese the other day and was really pleasantly surprised. And I bought my first slow cooker last week so I’m super excited to try that out. I may give jambalaya a go!

I’m usually bad at cooking on the regular too, but one-pot recipes make it so much easier! :)
Good for you for trying out some new recipes! I’m not crazy about jambalaya (probably because the few times I did try it it was too spicy!). But I’m going to check that one out. It looks good!
Thanks Jenmarie! This one was good- next time I’d definitely cut down on the creole seasoning though because I think that’s what made it too spicy for me.
all of these look delish! Now that it’s getting colder, all I want to do is stay in and cook… I just never know what to make!

My boyfriend and I do this thing where every week we think of a secret meal each and cook for each other. It’s so much fun and we get to try lots of new things. I made a veggie chilli a couple weeks back {I’d never made chilli before} that was pretty good but my favourite was Moroccan chicken curry that was made for me. Delicious!
I really fancy pancakes now, though. :-)

Although we definitely didn’t follow it to the dot, we had it over rice and no feta cheese. And we swapped dried cherries for glacé cherries – which is what made it so delicious for me :-) Let me know what you think if you ever try it!
